Traditional Vin Santo aged in oak barrels up to 5 years

The first thing that you will notice of our Vinsanto is its bright amber color. The Vinsanto Reserve is hold 5 years in oak casks. In these small barrels (with maximum capacity of 100lt) the freshly squeezed juice is sealed with wax lacquer without any addition and left to rest for 5 long years.
After this time the event preceding the opening of the kegs is an unmissable event. Once removed the wax lacquer which seals the casks, the first thing you smell is an intense perfume...it is formidable as each from we get a product with slightly different characteristics. This difference is due to the thermal shock that has undergone the cask in the Vinsantaia, which as is tradition in Tuscany is located in the attic of the farm.
Our Vinsantaia is well ventilated with many windows that allow a good air change and a continuous change of temperature throughout the year. These fluctuations allow the kegs to have a discontinuous fermentation, when it is hot it brews, when it is cool the process stops and then resume, and so on until it reaches the amount of alcohol sufficient to block the activity of the yeast.

Another feature that makes the Vinsanto so valuable, is that for every 100 litres of wine at the end of the process we gets at the most 30 liters, therefore savour every drop!

The Vin Santo is for us in Tuscany is not just a dessert wine but a wine for festive occasions to be enjoyed with family and friends. In fact, in the countryside when you meet your friends you cannot avoid a "Goccino of Vinsanto", better if accompanied by Cantucci (biscuits that are eaten dipped in VinSanto).
It 's a wine that is also used to celebrate the Mass in the church. Its name probably comes from this use, while others say that it comes from the time of the pressing of the grapes, that happens in the few days around Christmas and then during the "holy period" (Vinsanto means literally holy wine.
